Tips & Techniques

  • High Altitude (3500-6500 ft):

    Cook steak on covered grill over medium-low heat. Continue as directed above.

  • An alternative to the plastic bag for marinating the steak would be to use a 13x9-inch (3-quart) glass baking dish. Cover with a lid or plastic wrap.

Ingredients

  • 1/4  cup soy sauce
  • 1/4  cup water
  • 2  tablespoons vegetable oil
  • 1  teaspoon sugar
  • 1  clove garlic, minced
  • 1  beef flank steak (about 1 1/4 lb)

Directions

  1. 1In 2-gallon resealable food-storage plastic bag, mix all ingredients except steak. Add steak; seal bag and turn to coat. Refrigerate at least 6 hours or overnight to marinate, turning bag once or twice.
  2. 2When ready to cook steak, heat gas or charcoal grill. When grill is heated, remove steak from marinade; pour marinade into measuring cup. Place steak on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 15 to 20 minutes, turning occasionally and brushing with marinade, until steak are desired doneness. Discard any remaining marinade. Let steak stand on platter 5 minutes; cut diagonally across grain into slices. If desired, garnish with cherry tomatoes and red onion slices.
