    Ingredients

    • 1/2 cup frozen edamame
    • 1/2 cup sugar snap peas, halved
    • 2 tablespoons soy sauce
    • 1 tablespoons extra-virgin olive oil
    • 1 teaspoon brown sugar
    • 1 scallion thinly sliced
    • 1/2 lime (for the juice)
    • 1 bundle soba noodles
    • 1/2 cup diced carrots

    Directions

    1. 1Cook the edamame in boiling water for about 4 minutes. Add the snap peas and boil 1 more minute. Using a spider or slotted spoon, remove from water and set aside.
    2. 2Add the soba noodles and cook until al dente, about 6 minutes. Drain and rinse under cool water.
    3. 3In a medium bowl, whisk the soy sauce, oil, brown sugar, lime juice and scallions.
    4. 4Add the soba noodles, edamame, snap peas and carrots to the bowl and toss to coat with the dressing.
    5. 5Divide among 2 small to-go containers and pack them in a lunch box for your kids. *Garnish with cilantro or peanuts if desired.
