Enjoy Mexican tacos with a twist, made using turkey and wrapped into a distinctive cone shape, these sandwiches are great on-the–go. 25 minutes to a flavorful dinner!

Ingredients

3/4
lb ground turkey breast
1
teaspoon chili powder
1
can (14.5 oz) Mexican-style stewed tomatoes, undrained, cut up
8
flour tortillas (7 inch), heated
1/2
cup shredded reduced-fat Monterey Jack cheese (2 oz)
1
cup shredded lettuce

Directions

  • 1 Heat 8-inch nonstick skillet over medium-high heat. Add ground turkey and chili powder; cook 5 to 6 minutes, stirring frequently, until turkey is no longer pink. Stir in tomatoes. Reduce heat to medium; cook 10 minutes, stirring occasionally, until liquid has evaporated.
  • 2 Spoon turkey mixture evenly down center of each tortilla. Top each with cheese and lettuce. Roll tortillas into cone shape. Wrap 2 sandwiches together securely with foil; take with you for an on-the-go dinner.
Tips

"Recipes that are easy with familiar ingredients are most appealing to me. These quick tacos are just that. Forming the tortillas into cone shapes makes them easy to eat on the go." Jason
