    Ingredients

    • No-stick cooking spray
    • 4  (4-oz.) fresh or frozen sole fillets, thawed*
    • 1  (9-oz.) pkg. Green Giant® Harvest Fresh® Frozen Chopped Spinach, thawed, squeezed dry
    • 1/2  cup lowfat part-skim ricotta cheese
    • 1/3  cup dry bread crumbs
    • 1/4  cup shredded carrot
    • 1  tablespoon grated Parmesan cheese
    • 2  teaspoons grated onion
    • Dash pepper

    Directions

    1. 1MICROWAVE DIRECTIONS: Spray four 10-oz. microwave-safe custard cups with cooking spray. Coil fillets around inside of each prepared cup, leaving space in center for filling; set aside.
    2. 2In medium bowl, combine remaining ingredients; mix well. Spoon into center of each fillet-lined cup; cover with waxed paper. Microwave on HIGH for 5 to 6 minutes or until fish flakes easily with fork and filling is hot, rotating once halfway through cooking. Serve in custard cup or carefully remove to serving plate.
    3. 3CONVENTIONAL DIRECTIONS: Heat oven to 350°F. Prepare fillets and filling as directed above. Cover with foil. Bake at 350°F. for 10 to 15 minutes or until fish flakes easily with fork and filling is hot. Continue as directed above.
