Tips & Techniques

  • Tip

    * To toast almonds, spread on cookie sheet; bake at 350°F. for 5 to 7 minutes or until golden brown, stirring occasionally.Or spread in thin layer in microwave-safe pie pan. Microwave on HIGH for 4 to 7 minutes or until golden brown, stirring frequently.

  • Sectioning Citrus

To prepare citrus for salads, use a sharp paring knife. Working over a bowl to catch the juices, peel the fruit all around, cutting just deeply enough to expose the flesh. Make V-shaped cuts between the membranes to release the fruit's flesh into the bowl below. The chewy membranes and bitter pith will be left behind and can be discarded; the salad will contain morsels of juicy, tender citrus.

Ingredients

  • 3  cups torn leaf lettuce
  • 3  cups torn iceberg lettuce
  • 2  grapefruit, peeled, sectioned
  • 3  oranges, peeled, sectioned
  • 1  avocado, peeled, pitted and sliced
  • 1/4  cup slivered almonds, toasted if desired*
  • 1  cup purchased poppy seed salad dressing

Directions

  1. 1In large serving bowl, toss leaf and iceberg lettuce. Arrange grapefruit, oranges, avocado and almonds over greens. Serve with dressing.
