    Ingredients

    • 1 1/4  cups dried lentils, sorted and rinsed
    • 1  cup fresh or frozen green beans, cut into 1-inch pieces
    • 1/2  cup chopped green onions (about 5 medium)
    • 1/2  cup water
    • 1  teaspoon Creole or Cajun seasoning
    • 2  to 3 teaspoons red pepper sauce
    • 1/8  teaspoon pepper
    • 2  large sweet potatoes (about 1 1/2 pounds), cut into 1-inch pieces
    • 2  medium carrots, sliced (about 1 cup)
    • 1  can (28 ounces) whole tomatoes, undrained
    • 1  can (15 to 16 ounces) black-eyed peas, undrained

    Directions

    1. 1Heat all ingredients to boiling in Dutch oven, breaking up tomatoes; reduce heat. Cover and simmer 40 to 50 minutes or until vegetables and lentils are tender.
