Having a party or just serving a crowd, this recipe can easily be doubled or tripled!

Ingredients

box Betty Crocker™ Suddenly Grain Salad™ southwest grains
1
tablespoon olive or vegetable oil
1
tablespoon cold water
1
cup chopped zucchini
1
cup sliced cherry tomatoes
1
cup crumbled queso fresco cheese
1/2
cup chopped fresh cilantro

Directions

  • 1 Fill 3-quart saucepan half full with water; heat to boiling. Carefully place unopened bag of grains (from salad box) in water. Gently boil uncovered 17 minutes, turning bag once halfway through cooking.
  • 2 Meanwhile, in large bowl, mix dressing mix (from salad box), oil and cold water. Set aside.
  • 3 Place unopened bag of cooked grains into colander; drain. Rinse bag with cold water; drain.
  • 4 Open bag of grains. Add grains and remaining ingredients to dressing; toss to coat. Serve immediately, or cover and refrigerate.
Tips  

Make it a dinner salad! Stir in 2 cups cut-up cooked chicken.

What is queso fresco cheese? It is the most widely used cheese in Mexican cooking. Sold in rounds, it is crumbled to sprinkle on dishes. Shredded pepper Jack cheese can be used in place of the queso fresco as well.
