    Ingredients

    • 2  tablespoons margarine or butter
    • 1  (6.8-oz.) pkg. rice and vermicelli mix with Spanish seasonings
    • 2 1/2  cups water
    • 1  (11-oz.) can Green Giant® Super Sweet Yellow and White Corn
    • 1  (9-oz.) pkg. frozen cooked southwestern-flavored chicken strips, cut up
    • 3  tablespoons sour cream
    • Chopped fresh cilantro, if desired

    Directions

    1. 1Melt margarine in medium skillet over medium heat. Add rice and vermicelli mix; cook and stir 2 minutes. Add water and contents of seasoning packet from mix; mix well. Bring to a boil. Reduce heat to low; cover and simmer 15 to 20 minutes or until most of liquid is absorbed.
    2. 2Add corn and chicken; mix well. Cook 5 to 10 minutes or until thoroughly heated, stirring occasionally. Remove from heat; let stand 5 minutes before serving. Top each serving with sour cream and cilantro.
