Colorful and fresh-tasting, this chunky relish provides a flavorful counterpoint to grilled pork.

Ingredients

Pork

4
(4-oz.) boneless pork loin chops
1/4
cup lite soy sauce

Salad

1
cup chopped peeled peaches
1/4
cup chopped red bell pepper
1
tablespoon brown sugar
1/2
jalapeño chile, seeded, finely chopped

Directions

  • 1 Heat grill. Place pork chops in shallow glass baking dish; pour soy sauce over pork. Let stand at room temperature for 15 minutes to marinate.
  • 2 In medium bowl, combine all salad ingredients; toss gently. Let stand at room temperature to blend flavors while grilling pork.
  • 3 When ready to grill, remove pork from marinade; discard marinade. Place pork on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 6 to 8 minutes or until pork is no longer pink in center, turning once. Serve salad with pork.
Tips

To broil pork chops, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, turning once.
