Enjoy this cheesy tortilla soup made ready in just 20 minutes – a no-fuss dinner!

Ingredients

cans (14.5 oz each) low-sodium chicken broth

medium tomatoes, chopped (2 cups)
1/4
cup chopped green chiles (from 4.5-oz can)

baked tortilla chips

cup shredded reduced-fat Cheddar-Monterey Jack cheese blend (4 oz)
Fresh cilantro leaves, if desired

Directions

  • 1 In 2-quart saucepan, heat broth to boiling over high heat. Stir in tomatoes and chiles. Return to boiling. Reduce heat to medium-low; cover and simmer 6 to 8 minutes.
  • 2 For each serving, place 4 tortilla chips in individual soup bowl. Top each with 1/4 cup cheese and hot broth mixture. If desired, garnish with fresh cilantro.
