Welcome fall with this delicious alternative to apple pie, starring sliced pears tossed with ginger. Make it extra special by serving with a scoop of vanilla ice cream.

Ingredients

Crust

box Pillsbury™ refrigerated pie crusts, softened as directed on box

Filling

1/2
cup packed light brown sugar
1/4
cup granulated sugar

tablespoons cornstarch
3
tablespoons finely chopped crystallized ginger
1
teaspoon finely grated lemon peel
6
cups thinly sliced peeled pears (about 6 medium)
1
tablespoon cold butter

Topping

1
tablespoon water
4
teaspoons granulated sugar

Directions

  • 1 Heat oven to 425° F. Make pie crusts as directed on box for Two-Crust Pie using 9-inch glass pie plate.
  • 2 In large bowl, mix brown sugar, 1/4 cup granulated sugar and the cornstarch. Stir in ginger and lemon peel. Add pears; toss gently. Spoon into crust-lined plate. Cut butter into small pieces; sprinkle over filling.
  • 3 Top with second crust; seal and flute. Cut slits or shapes in several places in top crust. Brush crust with water; sprinkle with 4 teaspoons sugar.
  • 4 Bake 40 to 45 minutes or until pears are tender and crust is golden brown. After 15 to 20 minutes of baking, cover crust edge with pie shield ring strips of foil to prevent excessive browning. Cool on cooling rack at least 30 minutes before serving. Store covered in refrigerator.
Tips  

Ripe Anjou or Bosc pears work well for pies; choose fruit that is fragrant and slightly soft to the touch.

Serve this pie warm with a scoop of vanilla ice cream drizzled with caramel sauce.
