Turn up the heat with a spicy chicken soup packed with beans and vegetables – a flavorful dinner.

Ingredients

4
boneless, skinless chicken breast halves, cut into 1/2- inch pieces
3
cups water
1
(28-oz.) can whole tomatoes, undrained, cut up
1
(8-oz.) pkg. frozen cut green beans in a pouch
1
(9-oz.) pkg. frozen baby lima beans in a pouch
1
(4.5-oz.) can chopped green chiles
1
teaspoon salt
3
teaspoons chili powder
1
teaspoon paprika
1/4
teaspoon garlic powder
1/4
teaspoon onion powder
1/4
teaspoon hot pepper sauce
1
bay leaf
1
(15.5-oz.) can great northern beans, drained

Directions

  • 1 In Dutch oven or large saucepan, combine all ingredients except great northern beans. Bring to a boil. Reduce heat to low; cover and simmer 45 to 55 minutes or until flavors are blended and chicken is no longer pink.
  • 2 Add great northern beans; heat thoroughly. Remove bay leaf.
Tips

The ingredients that make up hot pepper sauce vary by brand. Some consist of nothing more than ground chili peppers in vinegar, while others include additional seasonings. Read the label and experiment with different brands to find your favorite.

Use any canned or fresh bean in this recipe, or substitute fresh or frozen corn kernels for one of the varieties of beans.

Garnish each serving with a sprinkling of Parmesan cheese, minced fresh parsley and minced green onions.
