A delicious Mexican-style pasta salad that is thrown together in minutes! Served warm or at room temperature, it’s full of color and flavor.

Ingredients

  • 4 cups cooked (al dente) rotini pasta, hot
  • 1 cup hot salsa
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 can (4 oz) sliced black olives, drained
  • 1 can (14 oz) Muir Glen™ Organic Tomatoes Fire Roasted
  • 1 can (14 oz) kidney beans, rinsed and drained
  • 3/4 cup sweet corn, drained
  • 1/2 cup red bell pepper, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 2 green onions, sliced

For the dressing:

  • 1/2 cup Italian dressing
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

    Begin by gathering your ingredients.

    Combine the dressing ingredients and set aside.

    While the pasta is hot, combine all ingredients in large bowl.

    Pour the dressing over and toss to combine.
