Cool to start and just the right amount of spicy to finish, this pretty-in-pink pasta salad works as hard at a potluck as is does on your lunch break, thanks to the satisfying and filling addition of fresh shrimp. Could this be the perfect summer salad?

Ingredients

  • 1 box (7.75 oz) Betty Crocker™ Suddenly Pasta Salad™ Classic
  • 1 avocado
  • 1 cucumber
  • 1/2 lb raw shrimp
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons Asian hot sauce (like Sriracha)

Steps

    Cook the Suddenly Salad™ according to pacakge directions.

    Dice the avocado and cucumber.
  • 3
    In a cast-iron skillet, heat the butter over medium-high heat. Add the shrimp, and cook it just until pink. Salt and pepper to taste.

    In a small bowl, mix together the mayonnaise and hot sauce.

    To assemble the pasta salad, spoon the shrimp over the cooked Suddenly Salad™ pasta. Mix in the avocado and cucumber. Drizzle the spicy mayonnaise atop.

    Making this recipe ahead of time? In air-tight containers, store the spicy mayonnaise mixture separately from the rest of the dish in the refrigerator, and drizzle the sauce just before serving.

    Can’t take the heat? Reduce the Asian hot sauce by half.
