Inspired by the favorite sushi roll, this spicy shrimp pasta salad is as easy to toss together as it is tasty.

Spicy Shrimp Pasta Salad

box Suddenly Salad (classic flavor)

avocado
1
cucumber
1/2
pound raw, tail-on shrimp

tablespoons butter
salt and pepper to taste
1/2
cup mayonnaise
2
tablespoons Asian hot sauce (like Srichacha)

Directions

  • 1 Cook the Suddenly Salad according to pacakge directions.
  • 2 Dice the avocado and cucumber.
  • 3 In a cast-iron skillet, heat the butter over medium-high heat. Add the shrimp, and cook it just until pink. Salt and pepper to taste.
  • 4 In a small bowl, mix together the mayonnaise and hot sauce.
  • 5 To assemble the pasta salad, spoon the shrimp over the cooked Suddenly Salad pasta. Mix in the avocado and cucumber. Drizzle the spicy mayonnaise atop.
  • 6 Serve and enjoy!

Spicy shrimp sushi inspired this recipe for shrimp pasta salad with a kick!


When sushi started rising in popularity finding its way into corner grocery stores and local sushi bars, I was determined to like the stuff. Though the flavor of seaweed and raw fish wasn’t immediately my favorite flavor combination, I was on a mission and pressed forward with steadfast palate.

Try as I might to like raw eel and octopus, I simply couldn’t palate the flavors.  It was too much, too fast. That is, until I stopped one afternoon in our local grocery store and found a plate of Spicy Shrimp Sushi. Cooked shrimp slathered with a spicy mayonnaise? Yes, please. Turns out this was the very sort of sushi I could tolerate, and it set the stage for a new zeal for all things sushi.

So, what happens when you take the flavors of spicy shrimp sushi and combine them with a summer pasta salad? Perfection, that’s what. This Spicy Shrimp Salad recipe is simple enough to appeal to the picky eating crowd, but haute enough for discerning foodies. Flavorful salt and pepper shrimp is cooked until buttery and golden, then tossed with cucumber and avocado, and served up with a hearty drizzle of spicy pink mayonnaise.
