A sweet, spicy relative of pumpkin bread, this bakes quickly in a square pan and can be served warm.

Ingredients

1/2
cup sugar
1/2
cup mashed canned or cooked sweet potatoes*
1/3
cup skim milk
1
tablespoon oil
1
egg or 2 egg whites
1
cup All Purpose Flour
2
teaspoons baking powder
1/4
teaspoon nutmeg
1/4
teaspoon allspice
1/2
cup dried currants

Directions

  • 1 Heat oven to 400°F. Spray 8 or 9-inch square pan with nonstick cooking spray.
  • 2 In large bowl, combine sugar and sweet potatoes until well mixed. Add milk, oil and egg; mix well.
  • 3 Lightly spoon flour into measuring cup; level off. Add flour, baking powder, nutmeg and allspice to sweet potato mixture; stir until well combined. Stir in currants. Pour batter into sprayed pan.
  • 4 Bake at 400°F. for 12 to 19 minutes or until bread is light golden brown and center is firm to the touch. Cut into squares. Serve warm or cool.
Tips  

* Refrigerate or freeze remaining sweet potatoes in an airtight container for a later use.
