    Ingredients

    • 3 1/2 Cups Jack Cheese
    • 1 Cup Pecorino
    • 2 10 oz Boxes Frozen Chopped Spinach
    • 2 12 oz Jars Marinaded Artichoke Hearts
    • 2 1/2 Cups Milk
    • 1 1/2 Cups Sour Cream
    • 1 8 oz box Cream Cheese
    • 1 Box Pasta
    • 3  Pitas

    Directions

    1. 1Mix the milk, sour cream, and cream cheese and whisk till combined.
    2. 2Add the jack and pecorino and mix.
    3. 3Cook the pasta, strain, and add to the milk/cheese mixture. Mix well until creamy.
    4. 4Thaw the spinach and squeeze out extra liquids. Strain and chop artichokes. Add to the pasta mixture and mix well.
    5. 5Pour pasta mixture into a large baking dish or individual sized oven safe bowls.
    6. 6Chop pita into small pieces. Toss with olive oil and salt. Top pasta with pita.
    7. 7Bake at 400 for around 30-40 minutes until pita is well browned.

    I only put 1 box of spinach in but this is the best EVER!!! <3 I agree with the previous poster though, unless you have a very large family, you will have plenty left overs. I made the recipe as is, and had two large 9x13 corning-ware dishes full. Fed 5 people and still had left overs. This is delicious and a wonderful way to hide some veggies, my kids LOVED it.

    I made this two days ago and I can attest that it is wonderful! Dan, you always have some of the greatest ideas. I have to warn people though - This makes a TON of mac and cheese! I should have halved it, but that's ok - I'll just freeze half of it for later. If you decide to make the entire recipe but plan to freeze some, don't add the pita chips to the top as they will get soggy. Wait till ready to serve. The only thing I added to this was a little bit of salt to my personal bowl of food - this was absolutely perfect comfort food. Thanks again!
