Dessert doesn't get any easier than this: Mini store-bought graham cracker crusts filled with colorful Yoplait® Yogurt.

Ingredients

  • 6 (4 oz) store-bought mini graham cracker crusts
  • 6 containers (6 oz) Yoplait® Original Yogurt in spring colors (I used Key Lime, Lemon Cream Pie, Blueberry, Strawberry, Orange Creamsicle, and Blackberry)
  • Fruit garnish (lime slices, lemon slices, strawberry slices, orange slices,blueberries and blackberries)

Steps

    Fill each graham cracker crust with one of the Yoplait yogurts. Garnish with fruit pieces right before serving.

  • These rainbow colored, multi-flavored mini tartlets have everything you want in a Spring dessert -- minus the heaviness! I have a couple of friends who say they're afraid to have me over to their house for dinner because they’re intimidated by my cooking abilities. All I can say is, dang, do I have them fooled or what? I’m not saying that I’m not a good cook, but I’m all about easy dishes that look like they are a lot more work than they actually are. These Spring Rainbow Yogurt Tartlets are a great example of whipping together an easy dessert that looks gorgeous and -- well – somewhat intimidating. This recipe doesn’t even involve actually cooking anything, so even my somewhat culinary-challenged friends could pull it off. These are embarrassingly simple yet colorful, flavorful, and quaint at the same time. Start with some store-bought mini graham cracker crusts (aren’t they cute?) and fill them with your favorite Yoplait yogurt. I went with the ever-loved rainbow theme and filled my crusts with Strawberry, Orange Creamsicle, Lemon Cream Pie, Key Lime Pie, Blueberry, and Blackberry yogurt for the perfect yogurt rainbow. What turns these from plain to gourmet is the fruit garnish. Top each tartlet with a piece of fruit that corresponds with the flavor of the yogurt. Spring has sprung and those bikinis are lurking in the corner. These tartlets are a light and portion-controlled dessert for those of you trying to lose a couple of elle-b’s!
