Strawberry Cheesecake Cups

This recipe, adapted from one in an elementary school fundraiser cookbook from my youth, makes perfect strawberry-topped single-serving cheesecake cups.

    Ingredients

    • 2 8-ounce packages low-fat cream cheese
    • 3 large eggs
    • 1 cup sugar
    • 1 tsp vanilla extract
    • pinch salt
    • 16  vanilla wafers
    • 3 cups fresh strawberries, quartered
    • 1 tbsp sugar

    Directions

    1. 1Preheat the oven to 350 degrees.
    2. 2In the bowl of a stand mixer, beat together the cream cheese and eggs until well combined. Add the sugar, vanilla and salt and mix well to combine (about 1-2 minutes)
    3. 3Line 16 muffin pan cups with paper liners. Place 1 vanilla wafer into each liner.
    4. 4Divide the batter evenly among the 16 cups, filling about 3/4 cup full.
    5. 5Meanwhile combine the strawberries and 1 tablespoon of sugar. Mix well. Store in the fridge until ready to serve (at least 1 hour).
    6. 6Bake for 20-25 minutes, until set. Remove from the oven and let cool completely before serving.
    7. 7Serve topped with strawberries.
