Strawberry-Coconut Coladaritas

Not only are these margaritas gorgeous, they taste amazing. Two of my favorite drinks mixed into one - a strawberry margarita and a pina colada.

    Ingredients

    • 1 cup sugar
    • 1 cup water
    • 1 1/2 cups strawberries, sliced
    • 1/2 cup triple sec
    • 1/2 cup tequila
    • 1/2 cup fresh lime juice
    • 1/2 cup coconut milk
    • 1/2 cup cream of coconut
    • 2 tablespoons kosher salt
    • 2 tablespoons sugar
    • 2 tablespoons coconut, shredded

    Directions

    1. 1Combine sugar and water in a medium saucepan. Bring to a boil, and let sugar dissolve. Cool completely, and add strawberries. Puree in blender. Pour into another container.
    2. 2In a blender, combine 1/2 cup strawberry puree, triple sec, tequila, lime juice, coconut milk, and cream of coconut, and 2 cups of ice. Puree until smooth.
    3. 3Combine salt, sugar, and coconut on a plate. Using a lime slice, rim the edge of a glass with lime juice, and dip rim into sugar/salt mixture. Pour drink into glass and garnish with strawberries and lime wedges.
