Not only are these margaritas gorgeous, they taste amazing. Two of my favorite drinks mixed into one - a strawberry margarita and a pina colada.

Strawberry-Coconut Coladaritas


cup sugar
cup water
1 1/2
cups strawberries, sliced
cup triple sec
cup tequila
cup fresh lime juice
cup coconut milk
cup cream of coconut
tablespoons kosher salt
tablespoons sugar
tablespoons coconut, shredded


  • 1 Combine sugar and water in a medium saucepan. Bring to a boil, and let sugar dissolve. Cool completely, and add strawberries. Puree in blender. Pour into another container.
  • 2 In a blender, combine 1/2 cup strawberry puree, triple sec, tequila, lime juice, coconut milk, and cream of coconut, and 2 cups of ice. Puree until smooth.
  • 3 Combine salt, sugar, and coconut on a plate. Using a lime slice, rim the edge of a glass with lime juice, and dip rim into sugar/salt mixture. Pour drink into glass and garnish with strawberries and lime wedges.

Strawberry-Coconut Coladaritas

As soon as it starts to heat up, I need an icy, cold cocktail to cool me down.

My Strawberry Coconut Coladaritas are perfect after a day on the beach, on the boat, or a particularly rough day at the office. Whenever you need a little bit of the tropics in your life, this drink is for you. Whatever your motivation, this margarita-pina colada hybrid is just the ticket.

To get this drink going, you need to make a simple syrup. Totally easy. Just boil equal parts sugar and water until the sugar dissolves. Cool it down completely, and add some strawberries. Give it a whirl in the blender and pour it into a container. Now you have the strawberry base. If you have leftovers (I have a feeling you will not, but just in case) this lasts for a few days in the fridge. Or feel free to make it ahead of time; you never know when you might feel a coladarita coming on!

Pour 1/2 cup of the strawberry puree into a blender with triple sec, tequila, fresh lime juice, coconut milk, cream of coconut, and some ice. Turn the blender on, and there you have a strawberry coconut coladarita!

My favorite part? The salt and sugar rim. Put some kosher salt, sugar, and shredded coconut onto a plate. (I like to chop my coconut up in the food processor a bit, but you do not have to.) Slice up a lime into wedges. Rub the lime wedge around the rim of the glass and dip into the salt and sugar mixture. Pour the drink into the glass and garnish with lime wedges and a strawberry if you are feeling really fancy. A straw really makes this drink a treat in my opinion. Sort of like a milkshake. But a boozy, grown-up one.
