    Ingredients

    • 1 1/4 cups flour
    • 1 1/4 cups quick-cooking oats
    • 1/2 cup sugar
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 3/4 cup butter, melted
    • 2 teaspoons vanilla extract
    • 1 cup strawberry preserves
    • 1/2 cup flaked coconut

    Directions

    1. 1In a bowl, combine the dry ingredients
    2. 2Add the butter and vanilla
    3. 3Stir until crumbly
    4. 4Set aside 1 cup of the mixture
    5. 5Press the remaining crumb mixture into an ungreased 13 x 9 inch baking pan
    6. 6Spread the preserves over the crust
    7. 7Combine the coconut and the reserved crumb mixture
    8. 8Sprinkle over the preserves
    9. 9Bake at 350 F for 25-30 minutes or until the coconut is lightly browned
    10. 10Cool completely
    11. 11Makes 3 Dozen
