    Ingredients

    • 1/3  cup uncooked regular long-grain white rice
    • 2/3  cup water
    • 4  large green bell peppers
    • 1  lb. lean ground beef
    • 1/4  cup chopped celery
    • 2  tablespoons chopped onion
    • 1/2  teaspoon salt
    • Dash pepper
    • 1/4  cup ketchup
    • 1  medium tomato, chopped
    • 1  (8-oz.) can tomato sauce
    • 1  teaspoon sugar
    • 1/4  teaspoon dried basil leaves
    • 1  oz. (1/4 cup) shredded Cheddar cheese

    Directions

    1. 1Cook rice in water as directed on package.
    2. 2Meanwhile, heat oven to 350°F. Cut tops from bell peppers; remove membrane and seeds. In large saucepan, bring enough water to cover peppers to a boil. Add peppers; cook over medium heat for 5 minutes. Drain; set peppers aside.
    3. 3In large skillet, combine ground beef, celery and onion; cook 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain.
    4. 4Add cooked rice, salt, pepper, ketchup and tomato; mix well. Spoon mixture into peppers. Place peppers in ungreased shallow baking pan.
    5. 5In small bowl, combine tomato sauce, sugar and basil; mix well. Spoon half of sauce over peppers.
    6. 6Bake at 350°F. for 30 to 40 minutes or until peppers are tender, spooning remaining sauce over peppers and sprinkling with cheese during last 5 minutes of baking.

    I use 2 cans of tomato soup and some water poured around the peppers and cook them in the crock pot all day

    I've used this recipe since I found it in one of my new cookbooks as a newlywed 36 years ago. Its always been the BEST. For those who aren't excited about green bell peppers try using the yellow bell peppers, they are super sweet and mild and are great in this. Even better the next day too!

    My boyfriend and I made these last night and they were DELICIOUS! As I've never had stuffed peppers before, I wasn't sure they would be filling, but these made for an excellent (and healthy) dinner. We substituted lean turkey meat for beef, and stirred in some minced garlic and garlic powder. We also used a mix of shredded Cheddar and Colby Jack for a little extra kick. I think next time we may experiment with some spices, though it's already got a wonderful flavor. We highly recommend these!

    I used a Home Made Tomato Sauce to Top the Peppers, You can make it in Batches and use as needed (this was a great way to use the last little that was left!!! I used Pork instead of Beef to stuff w/ the rice and I omited the Ketchup to make it a much healtier alternative (substituted by some of the Home Made Tomato sauce)!

    This recipe was easy to follow and had a wonderful flavor. I was initially afraid there would not be enough flavor as there were no spices involved. However, the flavors were wonderful from the pepper and the onions. Excellent recipe on every level.
