• A couple of months ago we headed down to the Florida Keys for a quick getaway. We boated, snorkeled, and ate all day long. The day always ended with dinner on the beach to watch the sunset. It was magical! I ate more Key Lime pie that trip than I can even remember. Now that's back to the grind, with schedules and responsibilities, I wanted a little reminder of our carefree, sunblock-coated vacation. These Sun and Sky Yogurt Parfaits couldn't be any easier. Start with your favorite tropical flavors of Yoplait yogurt. I was reminiscing about my Key Lime Pie escapades, so I chose Key Lime Pie and Strawberry Mango tropical yogurts. But there are tons of other flavors to choose from like Margarita or Pina Colada. In a parfait glass start layering spoonfuls of yogurt and whipped topping until you get to the very top of your glass. If you've ever been to the Keys you know that when sunset comes, everyone drops what they're doing and gazes at the horizon. In the summer, I swear the sun is as huge as an entire skyline! For our parfaits I added a Key West layer of sun (orange gelatin) on top of the parfait for a sunset ending. Enjoy this little escape to paradise!
