When you just don't have time to fuss over dinner, this flavorful recipe is the perfect answer.

Ingredients

oz cooked chicken (rotisserie chicken works great!)
1
(12 oz) package frozen broccoli cuts
1
large carrot, peeled and shredded
1/4
cup Hoisin sauce
2
tsp rice wine
1
tsp ground ginger
1
tsp garlic powder
4
cups cooked rice
Sliced almonds (optional)

Directions

  • 1 Dice the chicken and transfer to a large mixing bowl. Cook the broccoli according to package directions and then add to the bowl as well, along with the carrot.
  • 2 In a small saucepan, combine the Hoisin sauce, rice wine, ginger and garlic powder. Heat over a medium flame until boiling. Pour over the chicken, broccoli and carrots. Toss to coat.
  • 3 Scoop one cup of rice onto each of four plates. Top with the chicken mixture.
  • 4 If desired, sprinkle with almonds before serving.
