Nice big, soft ginger cookies. A great recipe when you are craving cookies but looking for something a bit different that plain old chocolate chip or sugar cookies.

Ingredients

cups all-purpose flour

teaspoons ground ginger

teaspoon baking soda

teaspoon ground cinnamon

teaspoon ground cloves

teaspoon salt

cups margarine, softened

cup sugar
1
large egg
1
tablespoon water

cup molasses

tablespoons sugar

Directions

  • 1 Preheat oven to 350° F. Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  • 2 In large bowl, cream together margarine and 1 cup sugar until fluffy. Beat in egg, then stir in the water and molasses. Slowly add sifted ingredients into the molasses mixture. Shape dough into balls (about the size of a golf ball) and roll in remaining 2 tablespoons of sugar.
  • 3 Shape dough into balls (about the size of a golf ball) and roll in remaining 2 tablespoons of sugar. Place cookies 2-3 inches apart on ungreased cookie sheet. Flatten slightly.
  • 4 Bake 8 to 10 minutes. Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in airtight container.
