Ingredients

  • RICE MIXTURE
  • 1/2  cup uncooked regular long grain rice
  • 2  tablespoons sugar
  • 2  cups milk
  • 1  tablespoon margarine or butter
  • PUDDING
  • 6  eggs
  • 1  cup sugar
  • 1/2  teaspoon cinnamon
  • 1/4  teaspoon salt
  • 1/4  teaspoon nutmeg
  • 1/2  cup raisins
  • 2  cups milk

Directions

  1. In medium saucepan, combine all rice mixture ingredients. Bring to a boil. Reduce heat to low; cook uncovered 20 to 25 minutes or until creamy, stirring occasionally. Remove from heat; cool slightly.

  2. Heat oven to 350°F. Lightly grease 8-inch square (1 1/2-quart) baking dish. In large bowl, beat eggs; stir in remaining pudding ingredients and rice mixture. Pour into greased dish.

  3. Bake at 350°F. for 55 to 60 minutes or until set. Serve warm or cool. If desired, pour whipping cream over each serving.
