Ingredients

  • 2  slightly beaten eggs
  • 1/2  cup milk
  • 3/4  cup Hungry Jack® Mashed Potato Flakes
  • 2  tablespoons instant minced onion
  • 1  teaspoon salt
  • 1/8  teaspoon pepper
  • 1/8  teaspoon nutmeg
  • 1/2  lb. ground beef
  • 1/4  lb. ground pork
  • 1/4  lb. ground veal
  • 1  (10 1/2-oz.) can cream of mushroom soup
  • 1/3  cup consomme

Directions

  1. OVEN 350°F.

  2. Combine in mixing bowl eggs and milk. Stir in potato flakes and let stand 1 to 2 minutes. Add onion, salt, pepper and nutmeg. Blend in ground beef, pork and veal. Mix well.

  3. Shape into small meatballs using 1 teaspoon for each. Bake at 350°F. in greased 13x9x2-inch pan about 20 minutes or until meatballs are browned. Place meatballs in 2-quart baking dish.

  4. Combine mushroom soup and consomme. Spoon over meatballs. Cover and bake 15 to 20 minutes or until sauce is bubbly.
