Dinner ready in just 30 minutes! Enjoy this sweet and sour pasta salad packed with mushrooms, pea pods, cabbage, chestnuts and cashews. Perfect if you love Asian cuisine.

Ingredients

ounces uncooked capellini (angel hair) pasta, broken in half

cups shredded Chinese (napa) cabbage

cup sliced mushrooms (3 ounces)
1
cup Chinese pea pods, cut in half (4 ounces)
1
can (8 ounces) sliced water chestnuts, drained
3/4
cup sweet-and-sour sauce
1/3
cup plain yogurt
1/2
cup chopped salted cashews

Directions

  • 1 Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • 2 Place pasta, cabbage, mushrooms, pea pods and water chestnuts in large bowl. Mix sweet-and-sour sauce and yogurt with fork. Pour over salad; toss until coated. Sprinkle with cashews.
Tips  

Cashews are the nut of the cashew apple. Their high fat content gives them their delicious buttery flavor. Because of that fat, cashews should be stored in the refrigerator or freezer so they don't become rancid.

Add 1 pound cooked peeled deveined medium shrimp with pasta in step 2. Continue as directed.
