Asian dinner ready in 25 minutes! Enjoy sweet and sour tofu cooked in skillet with vegetables and served with rice.

Ingredients

cups instant white rice
2
cups water
1/2
(10.5-oz.) pkg. firm lite tofu*
1
teaspoon cornstarch
1
medium green bell pepper, cut into squares
1/2
large onion, cut into 8 wedges
1
(8-oz.) can pineapple chunks in unsweetened juice, undrained
1
(9-oz.) jar sweet and sour sauce

Directions

  • 1 Cook rice in water as directed on package, omitting margarine and salt.
  • 2 Meanwhile, cut tofu into small bite-sized cubes; toss with cornstarch. Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add tofu; cook 5 to 8 minutes or until golden brown, stirring frequently. Place tofu on plate.
  • 3 Add bell pepper, onion and pineapple with juice to same skillet. Bring to a boil. Reduce heat; simmer 7 to 10 minutes or until onion is tender and liquid has been reduced.
  • 4 Add cooked tofu and sweet and sour sauce; stir gently to mix. Cover; cook 1 minute or until bubbly and thickened. Serve over rice.
Tips  

* Lite tofu can be purchased in health food stores or some large supermarkets.

• Tofu was first made by the Chinese in 164 B.C. • More than 14 different types of tofu exist in China and Japan. It's been part of the Asian diet for more than 2,000 years. • In Japan, tofu ryori are special restaurants that serve course after course of cold and hot tofu dishes.
