For this Chinese version of stuffed cabbage, a peppery blend of rice and shrimp becomes the filling for crisp lettuce leaves.

Ingredients

1/3
cup uncooked regular long-grain white rice
2/3
cup water
1
(5-oz.) pkg. frozen cooked small shrimp, thawed
2
green onions, thinly sliced
1/8
teaspoon crushed red pepper flakes

tablespoon hoisin sauce
12
small Bibb or iceberg lettuce leaves, washed, dried*

Directions

  • 1 In small saucepan, bring rice and water to a boil over medium-high heat. Reduce heat; cover and simmer 15 to 18 minutes or until rice is tender and water is absorbed.
  • 2 Add all remaining ingredients except lettuce leaves to rice; remove from heat. Keep warm until serving time.
  • 3 To serve, spoon filling onto center of serving platter; place lettuce leaves around edge. Have guests spoon about 2 tablespoons filling onto 1 lettuce leaf; fold or roll leaf around filling. If desired, serve bundles with dipping sauces such as hoisin sauce or sweet-and-sour sauce.
Tips  

*If lettuce leaves are large, cut into pieces about 6 inches square, removing thick center rib.

Prepare filling and fill lettuce leaves as directed in recipe. Place, seam side down, in shallow pan; cover with plastic wrap. Refrigerate up to 24 hours. Serve cold.
