    Ingredients

    • 1 Pillsbury refrigerated pie crust
    • 2 tsp cinnamon
    • 1 tbsp unsalted butter, melted
    • 1 1/2 cups cooked, mashed and cooled sweet potato
    • 1 cup packed light brown sugar
    • 1/2 cup heavy cream
    • 1/2 cup half and half
    • 3 large eggs
    • 1 tsp pure vanilla extract
    • 3/4 tsp cinnamon
    • 1/4 tsp ground cloves
    • 1/4 tsp salt
    • 1 large egg white plus 1 tsp water, beaten
    • Marshmallows, cut in half widthwise (for topping)

    Directions

    1. 1Preheat oven to 400 degrees F. Roll out pie crust on a lightly floured surface. Brush with butter and sprinkle evenly with cinnamon. Roll up tightly and slice into 1/2-inch rounds, like miniature cinnamon rolls.
    2. 2Press miniature cinnamon rolls, flat side down, evenly into the bottom and sides of a 9-inch glass pie plate, making sure there are no spaces between the rolls. Set aside.
    3. 3In a large bowl, whisk together mashed sweet potato, brown sugar, heavy cream, half and half, eggs, vanilla, cinnamon, cloves and salt. Using a whisk or switching to a hand mixer, whisk ingredients until smooth and thoroughly combined.
    4. 4Brush pie crust lightly with egg white/water mixture. Then, pour sweet potato mixture carefully on top of pie crust. Bake for about 40 minutes, or until filling has puffed up slightly and a toothpick inserted in the center comes out clean.
    5. 5Remove pie from oven and heat broiler. Top pie with halved marshmallows and place under broiler until marshmallows are a golden brown, about 1 minute. Cool pie on a cooling rack before serving.

    Cinnamon rolls not the same as pie crust. Have to cut the rolls in 3rds or 4ths to make it thin enough. If you spread it all out then it would lose its swirl pattern and would be more like bread than pastry. Sounds good and I am going to try this. I have an apple crist recipe that is great, or we think it is and I think that owuld work by putting it in a partially baked crust and putting topping over it. I pour in cider with the appleas and on the top crumbles when Iuse oatmeal, splenda/brown sugar, flour and a stick of butter and then put cinnamon and nutmeg over the appleas with some cider and then after adding the topping I put on cinnamon and nutmet and put on more apple sider and then bake it. Have to partially cook crust or it would be soggy with the cider. Haven't tried this but will.

    For pumpkin or apple, adjust the baking time per your recipe. The pie crust should bake just like your regular pie crust.

    Hi all - Using actual pre-made cinnamon roll dough would mean that the crust would rise. Using pie crust dough means that the crust will stay flat and thin.

    You can definitely top it with marshmallow fluff instead if you want. As for adjusting baking time for a different pie flavor, go by whatever your recipe requires. And I forgot to add that you have to brush the pie crust with the egg/water combo before pouring in the filling -- it's fixed! Thanks for pointing that out. :)

    VyCariously is right! I thought about using the premade cinnamon rolls, but they rise too much to work as a pie crust. But premade pie crust helps cut the time and effort in half, too!

    The cinnamon rolls wouldn't work as well. They're formulated to rise, whereas pie crust isn't. Besides, do you really want to slice those things in half? I would really prefer to do it the way it's listed, it looks much easier in the long run.
