    Ingredients

    • 1 pound ground beef
    • 1 (1.25 ounce) package of Old El Paso taco seasoning mix
    • 36 wonton wrappers
    • 1 (16 ounce) can Old El Paso refried beans
    • 36 tortilla chips
    • 2 cups shredded cheddar cheese
    • optional toppings: sour cream, diced tomatoes, cilantro, onion

    Directions

    1. 1Preheat the oven to 375 degrees. Spray 18 muffin cups with cooking spray.
    2. 2Brown beef in a skillet and drain the fat. Add the taco seasoning mix and water called for on the package and simmer for 4-5 minutes. Set aside.
    3. 3Place one wonton wrapper in the bottom of each muffin cup. Layer about 1 Tbsp of refried beans on top of each wonton. Crush one tortilla chip on top of the beans. Top with 1 Tbsp of taco meat and 1 Tbsp of shredded cheese. Repeat the layers again with a wonton wrapper, refried beans, tortilla chips, taco meat, and cheese.
    4. 4Bake for 15-18 minutes or until golden brown.
    5. 5Remove cupcakes from tin and top with your favorite taco toppings (i.e. sour cream, diced tomatoes, onion, or cilantro)

    When you say they can be made ahead and reheated, do you mean just assemble them ahead of time and then bake? Or bake them ahead of time too? I'm making these tomorrow. And whatever I can prep tonight , I'd like to do :) Thanks.

    gwashington1961....... a comment...... Filo does not stick together with butter. It is essential to use real butter to allow the moisture in butter to seperate the sheets in the oven. By adding either bread crumbs sugar, ground nuts, or corn chips (depending on the recipe) in between you allow the air to better seperate the dough and keep it from becoming gooey and heavy. I often, as a retired pastry chef, find this method for quick snacks or deserts very easy. Taco is a new addition to my collection of stuffings. Thank you, girlwhoateeverything

    I use filo dough and it is very easy! Melt real butter and add crushed and fine chopped garlic. Paint first layer with butter and add a small amount of crushed corn chips. Repeat 4 more times. Cut into 3 to 3 1/2 inch squares with pizza cutter. Place on cupcake paper out of pan. Stack with ingredients. When assembled place in muffin tin by holding on to paper and stuff to fit in pan. By using cupcake papers I eliminate the mess and do not need to wash pan...also great for serving! I also use salsa in layering.

    Im going to try this with soy crumbles instead of ground beef . We are vegans so no meats or animal byproducts. I'll let u know how they turn out?

    This recipe is everything it sounds like - good, flavorful, easy to assemble, and totally delicious to serve the family! I just put all the possible Taco Toppings upon the table, and allowed each person to assemble their Taco Cupcakes to their personal satisfaction! This recipe will be coming out often. The whole family was crazy about the final results. After watching me assemble two of the cupcakes, I was nearly thrown out of the kitchen to allow the rest of the family to make their own versions. It worked out very well. Girlwhoateeverything you truly created a splendid meal. My family called it 'cupcakes' for snacks, but I think they would eat them for B-L-D, & all snacks, too. I do need to agree with you the won ton wrappers work best for their size. I would never boil them for this recipe. Also, I would avoid Phyllo Dough - it's too thin, and requires butter beween the layers. There would be too many layers, trying to create 18 muffin sized 'cupcakes'. You would have that skinny pastry dough, falling apart without the melted butter gluing the sheets together. This recipe goes for quick and easy Mexican Style ingredients. It is written to give us that exact turnout with this delicious finish! YUMMO!!!!!

    @shawnalton, I'm not sure about phyllo dough. I think it may work but would definitely be a puffier version. I'm curious to see how they turn out...

    I love to cook and I'm always looking for something creative and appealing. These look amazing and I am going to try them, but at the moment, I don't have wonton wrappers and was wondering how Fillo dough would work. Any thoughts?

    I absolutely love this idea, girlwhoateeverything! I'm a gluten-free blogger and just have to create a gluten-free version of this with my whole grain tortilla recipe. I'm thinking of trying it grilled and/or baked. However, not everyone owns mini cast iron skillets. I will definitely link here to give you credit. You rock! Thanks so much!
