    Ingredients

    • 2 Pounds red potatoes
    • 2 Tablespoons Old El Paso Spicy Taco Seasoning
    • 1/2 Cup ranch dressing
    • 1/2 Cup cheddar cheese
    • 1/2 Cup Crumbled Bacon (optional)
    • 4 Scallions, minced

    Directions

    1. 1Cube potatoes into 1/2 inch cubes. Preheat oven to 350 degrees.
    2. 2In a large bowl, stir together ranch, taco seasoning, and half of the cheddar cheese.
    3. 3Add in potatoes and stir well to coat them with the sauce.
    4. 4Add potatoes to a large baking dish. Cover the dish with foil and bake them at 350 degrees Fahrenheit for 45 minutes.
    5. 5Remove foil and stir potatoes well. Return to the oven for another 20 minutes or until potatoes are crispy.
    6. 6Remove potatoes and sprinkle with other half of cheddar cheese. The heat from the potatoes should melt the cheese. Garnish with chopped scallions and serve immediately!

    This dish was AMAZING. I made it for Christmas Dinner, and it was the best dish out there, everyone loved it, including people who hate spice and potatoes. I think the next time the only thing I'd do differently, is add more ranch and cheese, and actually remember to put bacon on.
