Texan Stormy Day Chili

A very easy chili recipe for a rainy day. It's a great comfort food. Not fattening, but filling. It keeps you warm and cozy on rainy days (and in Texas, when it rains, it storms).

    Ingredients

    • 1 2 pound package ground beef or ground turkey
    • 1 can Rotel
    • 1 can black beans
    • 1 can diced tomatoes, Mexican
    • 1 can whole kernel corn
    • 1 can diced tomatoes, chipotle
    • 1 can dark red kidney beans
    • 1 can chili beans
    • 1 can light red kidney beans
    • 1  jalapeno chopped (optional)
    • salt
    • pepper
    • cayenne
    • chili powder

    Directions

    1. 1Brown your meat in a skillet. Since it's ground meat, you don't have to spray your skillet. While you're cooking your meat, add seasonings (listed above). I didn't add measurements because I wanted to leave the seasoning amount up to you (but go easy on salt: if you make it too salty, the rest of the chili tastes awful).
    2. 2When your meat is completely brown (if it's a little burnt, it's okay. It'll still taste all right) start adding your canned ingredients. They come in standard sized cans (not huge cans). You can add the canned items in your skillet if your skillet is big enough.
    3. 3If your skillet is not deep enough, then you can pour the canned items into a larger and deeper pot and let them warm up for a few minutes and then add the meat from your skillet into the bigger pot. Stir occasionally while letting the chili cook for about 10 minutes. If you chopped up a jalapeno, add it while the chili is cooking.
    4. 4Top with cheese, sour cream or chopped onions if you like. This recipe says 4 servings, but also has lots of leftovers.

    Well i made this for my mother who doesn't like kidney beans so i used Cannellini beans instead. It worked just as well this is a great recipe i love that you don't suggest spice as i feel every family pallet is different. Thank SOOOO much!
