    Ingredients

    • 1 lb. ground beef
    • 1 medium onion, diced
    • 1 green bell pepper, diced
    • 2 (14.5 oz.) cans Muir Glen Organic Fire-Roasted Diced Tomatoes (do not drain)
    • 2 (8.8 oz.) packages 90-second microwave-ready rice (about 2 cups cooked rice)
    • salt and pepper to taste

    Directions

    1. 1In a large skillet, brown ground beef with onion. Drain. Return beef and onion to pan. Add diced green pepper and cook another 2 minutes. Add diced tomatoes (add juice too -- do not drain). Bring to a boil. Cook rice in microwave, then add to skillet.
    2. 2Simmer mixture until most liquid is absorbed. Season to taste with salt and freshly ground pepper or your favorite seasonings.
    3. 3Serve with a light salad and Pillsbury breadsticks on the side.
