Thai Red Curry Mac and Cheese

A huge vat of mac and cheese with curry. HA-YES.

Ingredients

(8 oz) block monterey jack cheese, grated

tablespoon butter
3/4
cup panko breadcrumbs
1
pinch coarse salt and freshly ground pepper

tablespoons butter, melted
5
tablespoons all-purpose flour
1
pound elbow macaroni
1
(8 oz) block cheddar cheese, grated
5
cups milk
1
(4 oz) jar red Thai curry paste

Directions

  • 1 Bring a large pot of salted water to a boil. Cook the pasta until it is al dente, about 6 minutes. Drain.
  • 2 In another large pot, melt the butter over medium-high heat. Add the flour and whisk for about a minute, until it is darker in color and fragrant.
  • 3 Add the curry paste and whisk to combine.
  • 4 Add the milk, bring to a boil, then reduce the heat and continue to whisk until it is thick and creamy, about 5 minutes.
  • 5 Off the heat add the cheese and stir to combine.
  • 6 Add the cooked pasta and stir to combine.
  • 7 Transfer to a baking dish.
  • 8 In a small bowl, combine the remaining melted butter, panko, and the salt and pepper. Sprinkle the mix over the pasta and broil for a few seconds until golden brown on top.
  • 9 Garnish with fresh cilantro and serve immediately!

First of all, I absolutely adore any and all things mac and cheese. 

Second of all, I absolutely cherish any and all things curry.

Third of all, I absolutely treasure any and all things sweatpants, but I probably shouldn't have brought that up. 

Lastly, this ain't my recipe. But I about DAHED when I saw it on the Food Network dot com. I seriously didn't change much at all, except I went with all milk, instead of milk and cream. But I'm a moron. Go with cream. 

And all the people said A the Mac and Cheese MEN.

Start by boiling pasta! Like, traditional elbow macaroni. Yes.

Then you'll melt some butter in a large pot. Melt, melt, melt.

Then add some flour and make a roux! Just whisk it for a few minutes.

Then you'll add the curry paste and whoa, all that roux totally disappears. But in a good way. You'll see. And taste. And know.

Then you'll add all that milk (or milk and cream!) and whisk it until it's a freaking hallucination of beauty and wonderment. Except it's not. It's the real thing.
