Enjoy delicious vegetable pizza that is ready in 30 minutes - perfect if you love Thai cuisine.

Ingredients

flour tortillas (8 to 10 inches in diameter)

tablespoons peanut butter

cup soy sauce

tablespoons seasoned rice vinegar

teaspoons sugar

cup shredded mozzarella cheese (4 ounces)

cups fresh bean sprouts

bag (1 pound) frozen stir-fry vegetables, thawed and drained

Directions

  • 1 Heat oven to 400°. Place tortillas on ungreased cookie sheet. Bake 5 minutes.
  • 2 Mix peanut butter, soy sauce, vinegar and sugar; spread over tortillas. Top each with 2 tablespoons cheese. Spread bean sprouts and stir-fry vegetables evenly over tortillas. Sprinkle with remaining cheese.
  • 3 Bake 10 to 15 minutes or until cheese is melted.
Tips  

Purchased peanut sauce, found in the ethnic-foods section of your grocery store, can be used in place of the peanut butter, soy sauce, vinegar and sugar, but take a peek at the label to make sure the carbohydrates, fat and calories fit into your eating plan.
