Hi Anon - Here are a few tips on roasting a turkey. It is best to not use the lid of your roasting pan when cooking a turkey. http://www.tablespoon.com/recipes/roast-turkey-with-fresh-thyme-rub-and-maple-glaze-recipe/1/

I am using a roaster with a lid, how much liquid do I put in the bottom? And is cooking time longer than roasting without a lid?

Hi! This recipe is for a 8-12 lb. turkey. Feel free to increase the measurements of each ingredient to your liking. You can substitute 1 teaspoon of dried rosemary, sage, and thyme if you do not have fresh spices on hand.

Does the size of the turkey matter for the measurements? Should I be doubling or even tripling the amount for a 23 lb. turkey?

Always season your turkey at least the day before. Putting seasonings on it right before you put it in the oven doesn't really help. It adds SOME flavoring, but it really will be better if seasoned at least 24 hours ahead! That's how these places that sell you already smoked/baked turkeys do it!!

You should do all the seasoning before you put the bird in the oven then cover it with foil or paper bag. Every once in a while scoop or suck the juices from the pot and poor it over the top of turkey to keep it moist. Depending on the size of the bird it could take 2-4 hours to cook thoroughly. Enjoy.
