    Ingredients

    • 2 cups heavy whipping cream
    • 1/2 cup instant toffee-flavored coffee powdered drink mix
    • 1/2 cup rum
    • 8 ounces cream cheese or mascarpone cheese, softened
    • 1/2 cup sugar
    • 2 cups Cookie Crisp cereal
    • 1/4 cup grated dark chocolate
    • raspberries or cranberries & mint leaves for garnish

    Directions

    1. 1In an electric mixer, beat together the cream, coffee powder, rum, cream cheese, and sugar, until light and fluffy.
    2. 2Spoon a small amount of the cream mixture into the bottom of four wine glasses.
    3. 3Top with a layer of Cookie Crisp, then another layer of the cream mixture.
    4. 4Sprinkle grated chocolate on top of each wine glass.
    5. 5Cover tightly with plastic wrap and allow the desserts to sit in the fridge overnight. Though you can serve them right away, preparing them the day before allows the Cookie Crisp to soften to a cake-like consistency, just like ladyfingers!
    6. 6Garnish if desired. Serve and enjoy.
