Before homegrown tomatoes are available, good canned tomatoes will give the richest flavor to a simple uncooked pasta sauce.

Ingredients

oz. (4 cups) uncooked rigatoni (pasta tubes with ridges)

oz. (1 cup) shredded mozzarella cheese

cup chopped fresh basil

(14.5-oz.) can diced tomatoes, undrained

garlic clove, minced

teaspoon salt

teaspoon pepper

Directions

  • 1 Cook rigatoni to desired doneness as directed on package. Drain.
  • 2 Meanwhile, in large bowl, combine all remaining ingredients; mix well. Cover; let stand at room temperature for at least 15 minutes to marinate.
  • 3 Add cooked rigatoni to tomato mixture; toss gently.
