    Ingredients

    • 2  teaspoons extra virgin olive oil
    • 2  medium onions, chopped (1 cup)
    • 2  cloves garlic, minced
    • 1  can (28 ounces) Muir Glen® organic whole peeled tomatoes with basil, undrained
    • 1  can (15 ounces) pumpkin (not pumpkin pie mix)
    • 1  can (14.5 ounces) chicken or vegetable broth
    • 2  tablespoons dry Marsala wine
    • 1/2  teaspoon ground nutmeg
    • 1/4  teaspoon salt
    • 1/8  teaspoon pepper

    Directions

    1. 11. Heat oil in 4-quart saucepan over medium heat. Add onion and garlic; cook, stirring occasionally, 3-5 minutes or until tender. Stir in tomatoes, pumpkin, broth, wine and nutmeg, salt and pepper.
    2. 22. Heat to boiling; reduce heat to low. Cover; simmer 10 minutes. Carefully pour into blender or food processor; cover and blend on high speed 30 seconds or until smooth.
