What could be a better comfort food for game day than soup and grilled cheese? Tomato soup with mini grilled cheese sticks, that’s what!
Not only are they fun to look at (and easy to assemble), they taste delicious! Melty and crispy grilled cheese sandwiches to dunk into warm, basil-kissed tomato soup? Excuse me for a moment while I eat all of them before my guests arrive.
To start, it’s best to have all of the ingredients pre-chopped, pre-sliced, etc. I use sharp cheddar cheese and a whole grain baguette to make my mini sandwiches, but feel free to use your own favorite combo or jazz them up with added flavors—sliced deli ham or Italian seasoning, for example.
Here’s a neat little trick I learned in my grilled cheese adventures: To get that perfectly crispy, golden-brown crust on the sandwiches, spread a very thin layer of mayo on the outsides. That, plus a little pat of butter melted into the skillet or griddle, will give you perfect results.
Cook sandwiches on a buttered skillet or griddle (in batches, if needed) until bread is golden brown and cheese is melted. Set the sandwiches aside to cool slightly.
Meanwhile, heat your soup over the stovetop until warmed through. I love the creamy, slightly sweet texture and flavor of Progresso™ Creamy Tomato Soup with Basil, so I often pair it with my grilled cheese. Divide the soup evenly among small canning jars or ramekins—whatever small bowls you have around will work! Top each bowl of soup with small ribbons of chopped fresh basil.
Cut each grilled cheese sandwich in half and place two halves on each skewer. Top your mini bowls of soup with the skewers, and serve! Your guests are going to love these, I just know it. (Because I ate all of mine, that’s why. Ahem.)
