You’ll be amazed that so few ingredients and so little time results in such an elegant dish!

Ingredients

2
medium tomatoes
Salt and pepper to taste
1/4
cup crumbled feta or shredded mozzarella cheese (1 ounce)
2
tablespoons chopped pitted ripe olives
1
medium green onion, chopped (1 tablespoon)

Directions

  • 1 Remove stem ends from tomatoes. Cut tomatoes crosswise in half. Arrange cut sides up in circle in microwavable pie plate, 10x1 1/2 inches, or microwavable dinner plate.
  • 2 Sprinkle salt and pepper over tomatoes. Cover with waxed paper and microwave on High 2 minutes; rotate pie plate 1/2 turn.
  • 3 Mix remaining ingredients; sprinkle over tomatoes. Re-cover and microwave about 2 minutes or until tomatoes are hot and cheese is melted.
Tips

Feta is also known as “pickled cheese” because this traditional Greek cheese is cured and stored in its own salty whey brine.

Be careful not to overcook the tomatoes. The feta cheese will be warm but not entirely melted.
