All the flavors of rustic Italian food in one dish. Four cheese tortellini in a light lemon butter sauce with sauteed veggies. 4 servings

Ingredients

package four cheese tortellini
1
tablespoon olive oil
1
clove garlic, minced
1
package button mushrooms
1/4
cup sun dried tomatoes, drained
1/2
cup marinated artichoke hearts, roughly chopped
Juice
of one lemon
1
tablespoon butter
5
basil leaves, chopped
1/4
cup grated Parmesan cheese

Directions

  • 1 Cook tortellini according to package directions. While pasta is cooking, begin sauce.
  • 2 In a large saucepan, heat olive oil over medium heat. Add mushrooms and garlic, saute for 3-4 minutes.
  • 3 Add sun dried tomatoes and artichoke hearts cooking for 2-3 minutes, stirring frequently.
  • 4 Add lemon juice, butter, and salt and pepper. Cook for 2-3 minutes to allow sauce to thicken.
  • 5 Drain cooked tortellini and add to sauce. Incorporate Parmesan cheese and basil until well combined.
  • 6 Serve topped with additional Parmesan cheese.
