Tortellini is one of my favorite pastas for soup. The meat or cheese filling is a bonus for soups. This is a hearty soup good anytime with crusty bread. Double recipe for more servings.

Ingredients

  • 2 tablespoons olive oil
  • 1 large chopped onion
  • 1 stalk finely chopped celery
  • 3 or 4 cloves minced garlic
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 3 cups stemmed and chopped spinach or swiss chard
  • 4 cups chicken broth
  • 1 9 oz package fresh or frozen meat or cheese tortellini
  • 1 cup of drained and rinsed canellini beans
  • 1 tablespoon tomato paste
  • coarsely ground black pepper
  • parmesan cheese

Directions

  1. Heat olive oil in a large sauce pan or medium stock pot over medium-low heat. Add Onion, celery, garlic, basil and salt. Cook 5 minutes stirring frequently.

  2. Add spinach or swiss chard and continue cooking until greens are wilted. about 4 to 5 minutes.

  3. Add broth and bring to a boil.Add tortellini, beans,tomato paste,and pepper. return to a boil. Reduce heat to medium low and simmerpartially covered 5 to 7 minutes.

  4. If desired garnish each serving with grated parmesan cheese before serving.

  5. serves 6. Can be doubled or tripled.

    This soup is very good and with crusty bread it's a meal in itself. Very satisfying.
