Because they can be made in advance and are more interesting than plain meat-on-bread, these Mexican sandwiches make good party fare. Serve one per person or slice them into several pieces for party-tray appetizers.

Ingredients

(8-inch) flour tortillas

(6-oz.) container frozen avocado dip, thawed

(3-oz.) pkg. cream cheese, softened
8
oz. thinly sliced cooked roast beef or turkey

leaves leaf lettuce
4
oz. (1 cup) shredded Monterey Jack cheese
1
cup alfalfa sprouts
1/3
cup salsa or taco sauce

Directions

  • 1 Heat tortillas as directed on package. Meanwhile, in small bowl, combine avocado dip and cream cheese; blend well.
  • 2 Spread avocado mixture evenly over each warm tortilla to within 1/2 inch of edge. Arrange beef, lettuce, cheese and sprouts over avocado mixture. Top with salsa. (If sandwiches are made ahead, omit salsa inside tortillas; serve as a dip with sandwiches.)
  • 3 Roll up each tortilla; secure with toothpicks. Serve immediately, or wrap securely in plastic wrap and refrigerate until serving time.
Tips  

Improvise tortilla fillings to add flavor and crunch without piling on the calories: • Bean or alfalfa sprouts • Radicchio or other specialty lettuces • Sliced cucumbers • Thinly sliced onions, especially Vidalias and other sweet varieties • Sliced tomatoes • Shredded carrots • Sliced radishes • Thinly sliced fresh mushrooms • Chopped hot or sweet cherry peppers • Roasted bell peppers (not the kind packed in oil) • Purchased coleslaw blend
