    Make the dressing the night before, refrigerating it in a jar or container with a lid. Just before serving, shake the jar until the dressing is well-combined.

Ingredients

  • Dressing
  • 1/4  cup oil
  • 1  tablespoon sugar
  • 3  tablespoons frozen raspberry-lemonade concentrate
  • 2  tablespoons vinegar
  • 1/4  teaspoon Dijon mustard
  • Salad
  • 1  (6-oz.) pkg. prewashed fresh baby spinach (about 7 cups)
  • 1/3  cup sliced fresh strawberries
  • 1/3  cup fresh blueberries
  • 1/3  cup fresh raspberries
  • 1/4  cup sliced red onion, separated into rings

Directions

  1. 1In small bowl, combine all dressing ingredients; mix well.
  2. 2In large serving bowl, combine all salad ingredients. Pour dressing over salad; toss gently to coat.
