Cupcakes get a funky update... Push Pop style!

Ingredients

  • 1 1/4 cups water
  • 1 box Betty Crocker™ Delights Super Moist™ Party Rainbow Chip Cake Mix
  • 1/3 cup oil
  • Nonstick cooking spray
  • 1/2 cup rainbow sprinkles
  • 5 drops food coloring in red, orange, yellow, green, blue and purple
  • 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Creamy White Frosting
  • 3 eggs
  • 36 plastic push-up pop containers

    Preheat oven to 350°F. In a medium mixing bowl, combine cake mix, water, oil and eggs until well blended.

    Spray two mini muffin pans with nonstick cooking spray. Fill each 2/3 full with batter and bake until done, about 15 minutes.

    Remove from oven and repeat with remaining batter. Let cool completely.

    Drop one mini cupcake into each push-up pop container.

    Divide icing into 6 bowls and tint with red, orange, yellow, green, blue and purple.

    Add a generous teaspoon of frosting to the top of each cupcake. Sprinkle with rainbow sprinkles.

    Top with a second mini cupcake and add another dollop of frosting to the top. Finish with more rainbow sprinkles and serve.

  • Double Rainbows have been everywhere; we’re crazy for them! What better way to celebrate a special occasion like a birthday than with Triple Rainbow Pushup Cakes? Cupcakes have been the rage for several years, and lately pushup Cakes have been taking the cupcake world by storm. These feature Betty Crocker Rainbow Chip Cake Mix, Rainbow Icing and Rainbow Sprinkles…a triple dose of rainbow fun! The only trick is to find the containers. I live in a small town with no cake supply store, but if you do an internet search for “plastic push pop containers” you can find several companies with cheap shipping. My husband also made me an inexpensive “stand” since we make these all the time now. Simply buy a 3” x 3” post from your hardware store, drill some holes halfway through, and spray paint your desired color….instant push-up cake stand! My kids also love these because they’re so easy to make. In fact, my 7 year old put this batch together! Stack the cupcakes, icing and sprinkles. Serve and watch them disappear!
