Enjoy these hearty tuna sandwiches sprinkled with salt and pepper that are ready in just 10 minutes – perfect for a dinner.

Ingredients

1
(8-oz.) loaf French bread
2
tablespoons reduced-fat margarine
1
(6-oz.) can water-packed chunk light tuna, drained, flaked
1/2
cup sliced ripe olives
1/2
medium tomato, chopped
1/2
to 1 cup shredded lettuce
1
tablespoon olive or vegetable oil
2
teaspoons red wine vinegar
Salt and pepper to taste

Directions

  • 1 Cut bread in half lengthwise; spread lightly with margarine. On bottom half, layer tuna, olives, tomato and lettuce.
  • 2 In small bowl, combine oil and vinegar; mix well. Drizzle over lettuce. Sprinkle with salt and pepper. Cover with top half of bread. To serve, cut into 4 sandwiches.
Tips

Recipes from Nice, the city on the Mediterranean in southeastern France, typically include garlic and tomato. A traditional salade niçoise, the inspiration for Tuna Niçoise on French Bread (above), combines tuna (or anchoives) with boiled potatoes, string beans, tomatoes, olives and hard-cooked eggs, all in a vinaigrette dressing.
